I ran into this dilemma today after my afternoon workout.  It was3:45… and I hadn’t eaten lunch, but I was too hungry to wait for dinner.  I didn’t want the hassle of preparing a turkey burger and I didn’t want my protein in powdery chocolate form.  I looked in my fridge and pulled out a batch of fresh baby spinach…hmmm ok lunch is starting to sound better now, but what to do about the protein?  Do I really want to cook something?  I look in the pantry and spot a few cans of tuna… YUM! In two easy steps I prepared the PERFECT lunch…I am not fully “stuffed” but I can definitely wait for my turkey meatloaf later on today:

Step one; wash/dry the spinach, put on plate

Step two: open can of tuna…place on plate

Step 3 (okay I lied, three easy steps):  add 1/4 cup of lowfat dressing ( I like my semi-home made Berry Balsamic vinaigrette—-recipe to be posted later )

and enjoy!!
